We have moved to a new & improved pouch with teflon coating, replacing the vacuum seal bag (that had issues with oiling and damage in the Amazon pipeline) with an LLDPE resealable pouch, we have now beefed up the strength of the bag to increase the durability in transit. All our slabs are held in a modified atmosphere flush with Nitrogen to preserve freshness, so we can remain preservative free #NitroFresh.

Prime cuts of USDA beef are infused with vinegar, crusted with cracked cilantro and black pepper seeds and whole spices. Each steak is individually hung in hermetic rooms where all natural air-drying is carefully simulated and controlled.
